Chicken Caesar Salad

Ingredients

  • 2 cups Rotisserie Chicken, cooked, or 2-19 oz cans white navy beans
  • 3 lbs (1.36 kg) whole chicken
  • 1 pkg Rotisserie Chicken Seasoning
  • 2 tbsp Caesar Dressing Mix
  • 2 tbsp light mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • 14 cup olive oil
  • 14 cup milk, your choice
  • 8 cups romaine lettuce, chopped
  • 2 cups cucumber, chopped
  • 2 cups whole grain or gluten-free croutons
  • 1 lemon, cut into wedges

Preparation

  1. Chop cooked Rotisserie Chicken and set it aside.
  2. In a small mixing bowl, combine salad dressing ingredients and set aside.
  3. In a large serving bowl, combine chopped chicken, lettuce, chopped cucumber, dressing, and croutons.
  4. Top with lemon or lime wedges and serve.
