Ingredients
2 cups Rotisserie Chicken, cooked, or 2-19 oz cans white navy beans
3 lbs (1.36 kg) whole chicken
1 pkg Rotisserie Chicken Seasoning
2 tbsp Caesar Dressing Mix
2 tbsp light mayonnaise or Greek yogurt
1 tbsp lemon juice
1⁄4 cup olive oil
1⁄4 cup milk, your choice
8 cups romaine lettuce, chopped
2 cups cucumber, chopped
2 cups whole grain or gluten-free croutons
1 lemon, cut into wedges
Preparation
Chop cooked Rotisserie Chicken and set it aside.
In a small mixing bowl, combine salad dressing ingredients and set aside.
In a large serving bowl, combine chopped chicken, lettuce, chopped cucumber, dressing, and croutons.
Top with lemon or lime wedges and serve.
