Chicken Caesar Pasta Salad

Skip bringing the traditional pasta salad to the summer potluck. This pasta salad has a creamy Caesar dressing and is full of fresh, crunchy veggies. It’s simple to make and is delicious hot or cold, which means you can easily make it ahead of time.

Ingredients

  • 2 cups Rotisserie Chicken, cooked, or 2-19 oz cans white navy beans
  • 3 lbs (1.36 kg) whole chicken
  • 1 pkg Rotisserie Chicken Seasoning
  • 4 cups pasta, cooked
  • 2 cups romaine lettuce, shredded
  • 2 cups cherry tomatoes
  • 1 cup cucumber, chopped
  • 14 cup cheddar cheese, shredded
  • 2 tbsp Caesar Dressing Mix
  • 2 tbsp light mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • 14 cup olive oil
  • 14 cup milk, your choice

Preparation

  1. Chop cooked Rotisserie Chicken into bite-size pieces and set aside.
  2. In a large pot, cook pasta according to package directions.
  3. In a small mixing bowl, combine dressing ingredients. Set aside.
  4. In a large serving bowl, combine chicken, pasta, dressing, lettuce, veggies, and shredded cheese. Serve and enjoy!
