Chicken and Cheese Quesadillas

Make this warm and cheesy recipe in less than 15 minutes!

Ingredients

  • 1 cup cooked cubed chicken
  • 1 recipe prepared Poco Picante Salsa
  • 2 tbsp Poco Picante Salsa Mix
  • 1 cup diced tomatoes
  • 1 tsp lime juice, optional
  • cilantro, optional
  • 2 cups grated low-fat cheese
  • 1 green pepper, diced
  • 12 whole-wheat tortillas, 6"
  • 2 tbsp 3 Onion Dip Mix

Preparation

  1. Preheat oven to 400° F (205° C).
  2. Combine first 4 ingredients together in mixing bowl.
  3. Lay 6 tortillas on Sheet Pan lined with Sheet Pan Liner.
  4. Divide mixture between tortillas, spreading to within 1⁄2" (1 cm) of edge. Sprinkle each with 3 Onion Dip Mix.
  5. Top each with another tortilla. Bake for 10 minutes, or until cheese is melted.
  6. Cut into wedges and serve.
  7. Serving suggestion: serve with Sheet Pan Caesar Salad.
