Cherry Tomato Salad

A taste of summer! Simple is always best: fresh tomatoes, a couple glugs of olive oil and balsamic vinegar, combined with Pesto Sauce Mix make a light, refreshing side dish.

Ingredients

  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 2 tsp Pesto Sauce Mix
  • 4 cups cherry tomatoes, cut in half
  • 3 tbsp red onion, finely diced
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste

Preparation

  1. Whisk balsamic vinegar, olive oil and Pesto Sauce Mix in a serving bowl.
  2. Add cherry tomatoes and red onion. Toss gently to coat with dressing.
  3. Season to taste with salt and pepper.
