A taste of summer! Simple is always best: fresh tomatoes, a couple glugs of olive oil and balsamic vinegar, combined with Pesto Sauce Mix make a light, refreshing side dish.
Ingredients
2 tbsp balsamic vinegar
1 tbsp olive oil
2 tsp Pesto Sauce Mix
4 cups cherry tomatoes, cut in half
3 tbsp red onion, finely diced
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
Preparation
Whisk balsamic vinegar, olive oil and Pesto Sauce Mix in a serving bowl.
Add cherry tomatoes and red onion. Toss gently to coat with dressing.
Season to taste with salt and pepper.
