Ingredients
2 tsp oil
1 1⁄2 lbs (675 g) boneless, skinless chicken breast fillets
3 cups frozen mixed veggies
1 cup grated cheddar cheese, divided
1⁄2 block (8 oz/250 g) cream cheese, softened
1⁄2 cup sour cream
2 tbsp Nacho Cheese Dip Mix or CCB Dip Mix
Preparation
Heat oil in Sauté Pan over medium-high heat. Add chicken; cook until golden and cooked through, about 5–6 min per side.
Reduce heat to medium. Add veggies, 1⁄2 cup cheddar, cream cheese, sour cream, and dip mix. Stir to combine (it’s OK if the cream cheese is not fully incorporated yet). Cover; cook 4 min, stirring frequently, or until cheese has melted.
Top with remaining 1⁄2 cup cheese. Cover; cook 1 min or until cheese has melted.
