Ingredients

  • 6 eggs
  • 2 tbsp Spinach Dip Mix
  • 14 cup dry breadcrumbs
  • 1 small onion, diced
  • 1 can (14 oz/398 ml) artichoke hearts, drained and chopped
  • 1 cup grated low-fat cheddar cheese
  • 2 tbsp grated Parmesan cheese

Preparation

  1. Preheat oven to 325° F (165° C).
  2. Lightly brush Round Cake Pan with oil.
  3. Whisk eggs with dip mix.
  4. Stir in breadcrumbs, onion, artichokes and cheddar.
  5. Spoon into prepared pan. Sprinkle with Parmesan.
  6. Bake for 18 minutes, or until firm. Serve hot or at room temperature.
