On a Sheet Pan Liner, roll puff pastry into a 10.5” square. Gently flip onto an appy maker. Using a rolling pin, firmly roll over to cut pastry.
Sprinkle entire surface with cheeses, Salt, and Pepper. Using the rolling pin, lightly press cheese into puff pastry. Starting at wide end, roll up each twist on the appy maker, and form into crescents.
Place on a Sheet Pan lined with the Sheet Pan Liner. Using a basting brush, lightly brush each with egg wash. Bake until puffed and golden: approximately 10–11 minutes for small, 12–14 minutes for large.
