Chai Tea Meringues

These light, airy meringues are melt-in-your-mouth delicious.

Ingredients

  • 12 cup water
  • 2 tbsp chai tea
  • 3 egg whites
  • 1 cup sugar
  • 14 tsp cream of tartar

Preparation

  1. Preheat oven to 250° F (120° C).
  2. In Multipurpose Pot - 8 cup, bring water and chai tea to a boil. Simmer until liquid is reduced to 1 tbsp. Strain, reserving liquid, and cool.
  3. In a medium bowl, beat egg whites with electric mixer on low speed for approximately 2–3 minutes, until foamy. Mix on high speed until stiff peaks form.
  4. Slowly add sugar while continuing to beat on high. Add cream of tartar. When thoroughly mixed, egg whites will take on a glossy sheen. Add steeped tea and beat just to incorporate.
  5. Drop by spoonfuls or pipe mixture into small mounds on a Sheet Pan lined with a Sheet Pan Liner. Bake for 90 minutes. Turn off oven and leave to cool, keeping the oven door closed.
