Cauliflower is an excellent source of vitamin C and enjoying it as a soup is an excellent way to amp up your daily serving of veggies!
Ingredients
1 medium cauliflower, coarsely chopped
5 cups Nourish Broth or Vegetable Broth
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
1⁄2 - 1 cup milk, cream, or coconut milk, optional
1 tsp Minced Garlic or SPG Seasoning
1⁄2 cup Paris Bistro Sauce or Pesto Sauce, or sauce of your choice
2 tbsp Pesto Sauce Mix
2 tbsp water
2 tbsp pine nuts or pistachio nuts, optional
1 tbsp grated Parmesan cheese
1⁄4 cup olive oil
2 tbsp Paris Bistro Finishing Sauce Mix, shake jar before use
1⁄4 cup water
2 tbsp olive oil
Preparation
In a Multipurpose Pot over medium heat, cook cauliflower in broth until cauliflower is tender, approximately 10–15 minutes.
Add milk (if using) and garlic. Purée until smooth.
Pour into bowls, and then drizzle each bowl with 1–2 tbsp prepared sauce.
