Cauliflower Rice with Sticky Orange Sauce

We're making things easy by using frozen riced cauliflower, which is not only convenient but also budget friendly (have you seen the cost of fresh?!). Whether you're aiming to add more veggies to your table or simply looking for a delicious twist on rice, this dish has you covered. While your cauliflower gets cozy in the microwave, fire up the stovetop and whip up a zesty, sweet and sticky orange sauce to take this side dish over the top!

Ingredients

  • 6 cups frozen cauliflower rice
  • 1 pkg Sticky Orange Chicken Seasoning
  • 12 cup orange juice
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp water
  • 2 tsp Red Pepper Jelly, optional

Preparation

  1. Place cauliflower rice in Multipurpose Steamer or Round Steamer. Cover; microwave on high, 8–9 min or until heated through.
  2. Meanwhile, in Wok, combine seasoning, orange juice, soy sauce, and water. Bring to a simmer over medium heat for 1–2 min, stirring frequently, or until sauce has thickened. If desired, stir in red pepper jelly.
  3. To serve, drizzle over cauliflower.
