Cauliflower Queso Soup

Ingredients

  • 1 large head cauliflower
  • 6 cups prepared Nourish or Vegetable Broth
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 pkg Ooey Gooey Queso Hot Dip Mix
  • 14 cup heavy cream, optional

Preparation

  1. Chop cauliflower into bite-sized pieces; place in large Multipurpose Pot. Add broth; bring to a boil and simmer until cauliflower is tender, about 15 min.
  2. Using a blender or immersion blender, puree. Return to pot. Stir in hot dip mix. Return to a simmer for about 5 min to allow flavour to meld.
  3. Stir in cream, if desired. Ladle into bowls and add additional toppings, if desired.
