Carrot & Bulgur Salad

Beautiful bulgur salad filled with carrot and spinach, worthy of any dinner table.

Ingredients

  • 2 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 cup bulgur
  • 2 cups grated carrot
  • 2 cups baby spinach
  • 1 can (14 oz /398 ml) chickpeas, drained and rinsed
  • 2 tbsp lemon juice
  • 1 tbsp Vegetable Seasoning

Preparation

  1. Bring bouillon to a boil and pour over bulgur. Cover and let stand 20 minutes.
  2. Fluff bulgur with a fork and combine with remaining ingredients.
