Carrot & Bulgur Salad
Beautiful bulgur salad filled with carrot and spinach, worthy of any dinner table.
Ingredients
2 cups Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 cup bulgur
2 cups grated carrot
2 cups baby spinach
1 can (14 oz /398 ml) chickpeas, drained and rinsed
2 tbsp lemon juice
1 tbsp Vegetable Seasoning
Preparation
Bring bouillon to a boil and pour over bulgur. Cover and let stand 20 minutes.
Fluff bulgur with a fork and combine with remaining ingredients.
