Caramelized Carrots

Think outside the bag –a sweet pudding mix can be used for savoury dishes, too! The sweet base of Dulce De Leche Instant Pudding Mix is ideal for roasted veggies. Caramelized carrots make a great side with roasted meats.

Ingredients
  • 1 pkg (2 lbs/900 g) baby carrots

  • 12 medium red onion

  • 12 pkg Dulce de Leche Instant Pudding Mix

  • 2 tbsp olive oil

Instructions
  • Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.

  • Place carrots in Multipurpose Steamer. Cover and microwave on high for 5 min to soften.

  • Meanwhile, thinly slice red onion.

  • Toss steamed carrots with onion, pudding mix, and oil until evenly coated. Transfer to pan and roast 13–15 min, or until onions are softened.
