Ingredients
8 thick slices focaccia or crusty Italian bread
1 recipe prepared Pesto Sauce
2 tbsp Pesto Sauce Mix
2 tbsp water
2 tbsp pine nuts or pistachio nuts, optional
1 tbsp grated Parmesan cheese
1⁄4 cup olive oil
8 slices tomato
8 slices bocconcini
Rosemary Garlic Seasoning
Sea Salt
Black Pepper

Preparation
Spread bread slices with Pesto.
Top each with sliced tomatoes and bocconcini.
Sprinkle with Rosemary Garlic Seasoning, Salt and Pepper. Drizzle with olive oil, if you wish.
