Caesar Chicken Fingers
Perfect for kids – and ideal for dunking!
Ingredients
1⁄4 cup grated Parmesan cheese
2 cups Panko crumbs or coarse, dry breadcrumbs
1 lb (450 g) large, boneless, skinless chicken breasts
1⁄4 cup Caesar Dressing
2 tbsp Caesar Dressing Mix
2 tbsp light mayonnaise or Greek yogurt
1 tbsp lemon juice
1⁄4 cup olive oil
1⁄4 cup milk, your choice
2 crushed garlic cloves, optional
1⁄2 cup Marinara Dipping Sauce, for dipping, optional
1 can (14 oz /398 ml) low-sodium crushed tomatoes
1 1⁄2 tbsp Marinara Sauce Mix
Preparation
Preheat oven to 375 °F (190 °C).
Combine first 2 ingredients in a shallow dish and set aside.
Coat chicken with prepared Dressing. Place in crumb mixture and press to coat both sides.
Arrange in a single layer on a Sheet Pan lined with a Sheet Pan Liner, or on a crisper. Bake for 20 minutes, or until golden.
Serve with Marinara Dipping Sauce, if desired.
