Butterfly Pasta Salad
Ingredients
3⁄4 lb (340 g) farfalle pasta
1 tbsp olive oil
1 1⁄2 cups cherry tomatoes, halved
3⁄4 cup diced mozzarella cheese
3⁄4 cup Pesto Sauce, prepared
2 tbsp Pesto Sauce Mix
2 tbsp water
2 tbsp pine nuts or pistachio nuts, optional
1 tbsp grated Parmesan cheese
1⁄4 cup olive oil
Preparation
Cook pasta according to package directions. Drain, toss with olive oil and cool to room temperature.
Place all ingredients in large serving bowl and gently toss to combine.
