Broccoli Cheddar Chicken Casserole

Ingredients
  • 1 tbsp oil

  • 1 lb (450 g) lean ground chicken

  • 1 pkg Roast Turkey Seasoning

  • 4 cups broccoli florets

  • 4 cups prepared Vegetable Broth

  • 2 cups matchstick carrots

  • 2 cups uncooked rice

  • 2 tbsp butter

  • 1 cup grated cheddar cheese, divided

  • 12 cup milk, your choice

Instructions
  • Preheat oven to 425° F.

  • Heat oil in SautĂ© Pan over medium-high heat; add chicken and seasoning. Cook until browned, 3–4 min.

  • Meanwhile, roughly chop broccoli.

  • Add broccoli, broth, carrots, rice, and butter to pan; bring to a boil. Cover and reduce heat to medium-low. Simmer 20 min, until liquid is taken up and rice is almost cooked.

  • Stir in 1⁄2 cup cheese and milk. Sprinkle remaining 1⁄2 cup cheese over top.

  • Transfer pan to oven. Bake 15 min, until cheese is melted and starting to brown.
