Braised Bavarian Red Cabbage

With its vibrant jewel tones, braised red cabbage glows with good health. An excellent side for braised meats.

Ingredients

  • 2 tbsp vegetable oil
  • 1 small onion, halved then sliced
  • 1 small red cabbage, cut in half, then thinly sliced
  • 1 large apple, cored and coarsely chopped
  • 14 cup brown sugar
  • 14 cup raspberry vinegar, or balsamic vinegar
  • 34 cup water
  • 3 juniper berries
  • 1 bay leaf

Preparation

  1. Heat oil in a Multipurpose Pot over medium-high heat. Add onions and cabbage. Cook for 3 minutes, stirring continuously.
  2. Add apple, sugar, raspberry vinegar, water, juniper berries and bay leaf.
  3. Reduce heat to low, cover with a tight fitting lid and simmer for 25 minutes. Remove juniper berries and bay leaf before serving.

Tips
