Blushing Cauliflower

A great way to get children to enjoy cauliflower, and a good source of fibre and potassium.

Ingredients
  • 1 small cauliflower

  • 1 can (10 oz/284 ml) low-sodium tomato soup

  • 3 tbsp low-fat milk

  • 2 tsp Vegetable Seasoning

  • 13 cup grated Cheddar cheese

  • Sea Salt, to taste

  • Black Pepper, to taste

Instructions
  • Trim cauliflower. In a large pot of salted boiling water, cook whole head until tender crisp, about 8 - 10 minutes.

  • While cauliflower is cooking, combine tomato soup, milk, and Vegetable Seasoning in Multipurpose Pot - 8 cup. Stir well. Bring to a gentle simmer over medium heat.

  • Remove pot from heat, add cheese and stir well. Return pot to low heat and continue stirring until cheese melts. Season with Sea Salt and Pepper.

  • Place cauliflower on large serving plate and pour tomato cheese sauce overtop. Serve immediately.
