Black Bean Enchilada Sliders
Don’t settle for boring sandwiches, you deserve the whole enchilada! Spice up your next road trip or picnic with this tasty twist on enchiladas. Unlike deliciously messy enchiladas that are best enjoyed at home, these are served on crispy buns or baguettes. Easy to assemble on-the-go, making them the ultimate grab-and-go meal.
Ingredients
1 pkg Enchilada Seasoning
1 1⁄2 cups water
3 tbsp tomato paste
1⁄2 lime
1 tsp coconut or olive oil
2 cans (14 oz/398 ml each) unsalted black beans
4 medium-sized panini buns or chopped baguette
1⁄2 cup grated cheese, your choice
Preparation
In 4-Cup Prep Bowl, whisk seasoning with water and tomato paste. Microwave, uncovered, on high, 2 min or until thickened.
Using 2-in-1 Citrus Press, squeeze in juice from lime; whisk in oil. Set aside.
Drain and rinse beans. Place in Multipurpose Steamer; add 1⁄2 cup sauce. Cover; microwave on high 2 min. Using a fork, coarsely mash.
Slice buns open. Toast, if desired. Fill each bun with beans (it will be full!). Drizzle each sandwich with 2 tbsp reserved sauce. Add more, if desired. Alternatively, serve with remaining sauce on the side. Top with cheese and green onions, if desired.

Make mini sliders—simply swap panini buns with small hamburger buns.
