Black Bean Burgers

A grillable vegetarian delight!

Ingredients

  • 2 cans (19 oz/450 ml) black beans, drained and rinsed, divided
  • 13 cup whole-wheat breadcrumbs
  • 14 cup light mayonnaise
  • 2 tbsp Poco Picante Salsa Mix
  • 1 tbsp Burger Seasoning
  • 14 cup fresh cilantro, parsley or 2 green onions, chopped – optional
  • 1 tsp vegetable oil

Preparation

  1. Blend half the beans with breadcrumbs, mayonnaise, Poco Picante Salsa Mix and Burger Seasoning in a food processor until mixed but still chunky. Turn into a bowl and stir in remaining beans and cilantro.
  2. Wet hands to prevent sticking and form mixture into 6 patties.
  3. Coat a large frying pan with oil and set over medium-high heat. When hot, reduce heat to medium and add patties.
  4. Cook for 5 minutes, then carefully and gently flip and continue cooking for about 5 more minutes, until warmed through.
