Big Batch Bali Chicken

Cook once, eat twice! This makes enough cooked chicken for tomorrow’s Bali Chicken Quesadillas.

Ingredients

  • 6 tbsp Bali Glow Dry Glaze
  • 3 tbsp olive oil
  • 2 14 lbs (1 kg) boneless chicken breast
  • juice of one lime, optional

Preparation

  1. Combine Bali Glow Dry Glaze and oil in a resealable bag, add chicken and coat well. Let marinate in fridge for at least 10 minutes, and up to 24 hours.
  2. Preheat grill to medium, and cook chicken with lid closed, for approximately 6–8 minutes per side, until cooked through, and chicken has reached a Food Safe temperature of 165° F (74° C).
  3. No barbecue? No problem! Lightly oil a fry pan with a basting brush. Cook chicken over medium-low heat for 5 minutes, turn over, and place in a pre-heated 350° F (175° C) oven and cook for another 10–15 minutes, until chicken, is cooked through.
  4. Using 2-in-1 Citrus Press, squeeze lime over chicken and let rest for 5 minutes before serving.
