Beet, Pear and Goat Cheese Salad with Grilled Chicken

Beets are a great source of folic acid, potassium, calcium and antioxidants (betacyanin), which gives them their rich red colour.

Ingredients

  • 8 cups salad greens
  • 2 cooked beets, sliced
  • 2 pears
  • 1 small red onion
  • 3 cups cooked Rotisserie Chicken or Lemon Garlic Chicken
  • 3 lbs (1.36 kg) whole chicken
  • 1 pkg Rotisserie Chicken Seasoning
  • 3 lb (1.36 kg) whole chicken
  • 1 tbsp oil
  • 1 pkg Lemon Garlic Chicken Seasoning
  • 1 recipe prepared Balsamic Vinaigrette Dressing
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 14 cup crumbled goat cheese

Preparation

  1. Fill serving bowl with greens and top with beets, pears, onion and chicken.
  2. Drizzle with Vinaigrette and gently toss. Top with goat cheese and serve.
