Beet, Pear and Goat Cheese Salad with Grilled Chicken

Ingredients
  • 8 cups salad greens

  • 2 cooked beets, sliced

  • 2 pears

  • 1 small red onion

  • 3 cups cooked Rotisserie Chicken or Lemon Garlic Chicken

  • 3 lbs (1.36 kg) whole chicken

  • 1 pkg Rotisserie Chicken Seasoning

  • 3 lb (1.36 kg) whole chicken

  • 1 tbsp oil

  • 1 pkg Lemon Garlic Chicken Seasoning

  • 1 recipe prepared Balsamic Vinaigrette Dressing

  • 2 tbsp Balsamic Vinaigrette Dressing Mix

  • 34 cup olive oil

  • 14 cup balsamic vinegar

  • Sea Salt, to taste

  • Black Pepper, to taste

  • 14 cup crumbled goat cheese

Instructions
  • Fill serving bowl with greens and top with beets, pears, onion and chicken.

  • Drizzle with Vinaigrette and gently toss. Top with goat cheese and serve.
