Sneak in more veg with this tasty burger alternative.
Ingredients
3 cups cooked or canned beets, cubed
3⁄4 cup oats
1⁄2 cup diced onion
2 eggs
2 tbsp Pesto Sauce Mix
Sea Salt, to taste
Black Pepper, to taste
2 tbsp olive oil

1 recipe prepared Avocado Peach Salsa, optional
2 peaches, diced
1 avocado, diced
2 tbsp Poco Picante Salsa Mix
splash of lime juice, optional
chopped cilantro, optional
Preparation
Combine first seven ingredients in a prep bowl and mix well.
Rest mixture for 30 minutes to allow oats to absorb liquids.
Form the mixture into four patties. Heat frying pan to medium, add oil, and pan-fry patties for approximately 5 minutes per side, until crisp on the outside and warmed through.
Serve on buns with Avocado Peach Salsa or your favourite toppings.
