Ingredients

  • 4 cups mixed greens, finely chopped
  • 2 cans (14 oz/398 ml) lentils
  • 1 cup cooked pearl or pot barley
  • 1 12 cups diced apple, peach, plum, or grapes
  • 12 cup crumbled feta
  • 14 cup pickled red onion, finely chopped
  • 12 recipe prepared Greek Dressing or Balsamic Vinaigrette Dressing
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 13 cup toasted nuts, your choice, chopped

Preparation

  1. In a large bowl, combine greens, lentils, barley, apple, feta, and onion.
  2. Pour dressing over the salad and toss to combine
  3. Just before serving, top with nuts and topper, if desired.
