Ingredients
4 cups mixed greens, finely chopped
2 cans (14 oz/398 ml) lentils
1 cup cooked pearl or pot barley
1 1⁄2 cups diced apple, peach, plum, or grapes
1⁄2 cup crumbled feta
1⁄4 cup pickled red onion, finely chopped
1⁄2 recipe prepared Greek Dressing or Balsamic Vinaigrette Dressing
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
1⁄3 cup toasted nuts, your choice, chopped
Preparation
In a large bowl, combine greens, lentils, barley, apple, feta, and onion.
Pour dressing over the salad and toss to combine
Just before serving, top with nuts and topper, if desired.
