Bean and Orzo Zuppa

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 tbsp Pesto Sauce Mix
  • 1 can (14 oz/398 ml) cannellini beans, drained and well rinsed
  • 1 can (14 oz/398 ml) stewed plum tomatoes
  • 2 12 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 12 cup water
  • 12 cup orzo pasta
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. In Multipurpose Pot over medium heat, sauté onion in olive oil until translucent, about 3 minutes. Add Pesto Sauce Mix, cannellini beans and tomatoes. Stir and gently simmer for 5 minutes.
  2. Add Nourish Broth and water. Heat to a boil and add orzo pasta.
  3. Cook until pasta is tender, about 8 minutes. Season with Sea Salt and Black Pepper.
