Bean and Orzo Zuppa
Ingredients
1 tbsp olive oil
1 small onion, chopped
2 tbsp Pesto Sauce Mix
1 can (14 oz/398 ml) cannellini beans, drained and well rinsed
1 can (14 oz/398 ml) stewed plum tomatoes
2 1⁄2 cups Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1⁄2 cup water
1⁄2 cup orzo pasta
Sea Salt, to taste
Black Pepper, to taste
Preparation
In Multipurpose Pot over medium heat, sauté onion in olive oil until translucent, about 3 minutes. Add Pesto Sauce Mix, cannellini beans and tomatoes. Stir and gently simmer for 5 minutes.
Add Nourish Broth and water. Heat to a boil and add orzo pasta.
Cook until pasta is tender, about 8 minutes. Season with Sea Salt and Black Pepper.
