Banana Whole-Wheat Walnut Waffles

Ingredients
  • 2 bananas, finely chopped or mashed, plus extra, to taste

  • 1 recipe prepared Classic Waffles, (replace half white flour with whole-wheat flour)

  • 1 cup all-purpose flour

  • 2 tbsp sugar

  • 1 tsp baking powder

  • 1 pinch Sea Salt, finely ground

  • 2 eggs

  • 1 cup milk, your choice

  • 14 cup oil, + extra for brushing

  • 1 - 2 tbsp vegetable oil

  • 1 cup toasted crushed walnuts

  • maple syrup, to taste

Instructions
  • Preheat oven to 425° F (220° C).

  • In a mixing bowl, fold bananas into batter.

  • Place Waffle Mold on Sheet Pan. Using a basting brush, lightly brush Waffle Mold with oil.

  • Pour approximately 1⁄4 cup of batter into each Waffle Mold until it fills all corners.

  • Bake until golden, approximately 13–15 minutes. Let cool for 2 minutes, or until Waffle Mold is cool to the touch. Gently remove waffles from Waffle Mold.

  • Top with walnuts, and extra bananas and maple syrup, if you like.
