2 bananas, finely chopped or mashed, plus extra, to taste
1 recipe prepared Classic Waffles, (replace half white flour with whole-wheat flour)
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
1 pinch Sea Salt, finely ground
2 eggs
1 cup milk, your choice
1⁄4 cup oil, + extra for brushing
1 - 2 tbsp vegetable oil
1 cup toasted crushed walnuts
maple syrup, to taste
Preparation
Preheat oven to 425° F (220° C).
In a mixing bowl, fold bananas into batter.
Place Waffle Mold on Sheet Pan. Using a basting brush, lightly brush Waffle Mold with oil.
Pour approximately 1⁄4 cup of batter into each Waffle Mold until it fills all corners.
Bake until golden, approximately 13–15 minutes. Let cool for 2 minutes, or until Waffle Mold is cool to the touch. Gently remove waffles from Waffle Mold.
Top with walnuts, and extra bananas and maple syrup, if you like.
