News flash: Broth Mixes aren’t just for the winter! Serve up this savoury, grainy salad year-round as a warm side, or prep ahead for a packed lunch. Couscous is a good source of fibre and protein, and its neutral taste lets the umami flavours of the mix really shine!

Ingredients

  • 1 14 cups water
  • 3 tbsp Ramen Broth Mix or Sesame Ginger Dressing Mix, divided
  • 2 tbsp olive oil
  • 1 cup couscous
  • 1 bunch radishes
  • 4 cups broccoli florets
  • 1 cup shelled, frozen edamame
  • 1 tbsp each sesame oil and low-sodium soy sauce

Preparation

  1. In Multipurpose Pot, bring water, 2 tbsp broth mix, and oil to a boil. Stir in couscous. Cover and remove from heat; let stand 4 min, or until tender.
  2. Meanwhile, chop radishes and place in Round Steamer with broccoli, edamame, remaining broth mix, sesame oil, and soy sauce. Cover and, holding lid tightly, shake the contents of the steamer to evenly combine. Microwave on high 4 min, or until vegetables are tender.
  3. Use a fork to fluff cooked couscous. Divide between four plates and top with vegetables.
