Ingredients

  • 1 pkg (1 lb/450 g) rice vermicelli noodles
  • 2 large carrots, coarsely grated
  • 1 green pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 4 green onions, thinly sliced
  • 2 cups fresh bean sprouts
  • 1 recipe prepared Sesame Ginger Dressing
  • 2 tbsp Sesame Ginger Dressing Mix
  • 3 tbsp low sodium soy sauce or gluten free soy sauce
  • 13 cup oil
  • 12 cup rice vinegar
  • 1 cup coarsely chopped peanuts, nuts, or 3 Onion Roasted Almonds
  • 1 tbsp sesame seeds

Preparation

  1. Boil noodles for 3 minutes, drain, and rinse to cool.
  2. Place noodles in prep bowl with next 5 ingredients.
  3. Add Sesame Ginger Dressing or your choice of other Epicure Dressing and toss to combine.
  4. Sprinkle with chopped nuts and sesame seeds.
