Looking for a quick and easy meal that melts in your mouth? Try this delicious, no-mess and no-fuss “baked” potato made in just minutes in your steamer. Top with generous amounts of our vegan and gluten-free Better Than Bacon Topper to get that smoky, satisfying bacon flavour that pairs perfectly with the spud. Use plain Greek yogurt instead of mayo for a creamy, low-fat dip to dollop on your potato.

Ingredients

  • 4 Russet potatoes
  • 2 tbsp CCB Dip Mix or 3 Onion Dip Mix
  • 12 cup plain 2% Greek yogurt or mayonnaise
  • 12 cup sour cream
  • Toppings (optional): Better Than Bacon Topper or 3 Onion Dip Mix

Preparation

  1. Scrub potatoes and pierce several times with a fork. Place in Multipurpose Steamer and microwave for 5–7 min, until easily pierced with a fork.
  2. Combine dip mix with yogurt or mayonnaise and sour cream.
  3. Slice potato across the top and add a dollop of prepared dip and your favourite toppings, if desired.
