10-minute Lemony Chicken and Zucchini
Ingredients
2 zucchini, thickly sliced
1 lemon, thinly sliced
4 (5 oz/142 g) boneless, skinless chicken breasts, sliced into strips
2 tsp Lemon Dilly Dip Mix
1⁄4 cup crumbled light feta
1 recipe prepared El Greco Finishing Sauce, or sauce of your choice
Preparation
In a Multipurpose Steamer, spread out lemon slices and layer zucchini on top.
Rub chicken with Lemon Dilly Dip Mix and place on top of vegetables.
Cover and microwave on high for 6–8 minutes.
Top with feta and sauce.
